Appetizers were originally meant as a small bit to whet the appetite for more things to come. Nowadays they seem to have become the ultimate party food. Many appetizers, served instead of a meal. Bits and bits of many things. However they are served, there are so many delicious recipes to be had. Some of my favorites will be posted here!

Another type of appetizer that has taken this country by storm is the Spanish "Tapas". Tapas are small tastes of foods prepared and served with your drink of choice, often wine or sherry. Originally, the food on a tiny plate, or miniature casserole would be set on top of the wine glass to prevent flies from getting into the glass. Now, there are special made plates with a rim on the bottom to be able to set them on top of the wine glass - not to keep flies out - but to allow for a free hand at a party. This allows one to set the plate over the glass and, for example, shake hands with someone, or be able to reach for something else.

I attended a tapas class one time in Texas, and tapas can be defined as something so simple as a few olives on a plate, to fresh foods, to cooked or baked dishes. All in tiny portions. I will be including some here.
